Cake de mamie

Serves 8

Ingredients

  • 250 g flour,

  • 165 g softened butter,

  • 75 g mixed peel,

  • 125 g caster sugar,

  • 3 medium eggs,

  • 125 g raisins,

  • ½ lemon zest,

  • 1 tsp salt,

  • 1 tsp baking powder,

  • rum.

Preparation

Soak the raisins and mix peel in rum for 20 minutes. Mix butter and sugar until pale. Add the eggs one at the time and beat after each addition. Add the flour, salt and baking powder. Mix well. Add the dried fruit and mix again. Pour the batter into a greased baking tray. Bake at 150ºC for 5 minutes and then 45 minutes at 180ºC.
