Easy Courgette soupΒΆ

Serves 4

Ingredients

  • 800 g courgettes,

  • 1 onion,

  • parmesan cheese,

  • 400 mL chicken stock (in can is better),

  • 150 mL single cream,

  • salt & pepper,

  • nutmeg.

Preparation

Slice the courgettes and onion thinly and put them in a pan with the chicken stock and bring it to a boil. Cover and bring heat down, and simmer for 15 minutes. Then blend the soup, add the nutmeg, cheese and cream and stir. Season with salt and pepper. Serve while hot.
