Basmati rice with dill and cardamon

Serves 6

Ingredients

  • 2 cups basmati or jasmine rice,

  • 2 tbsp olive oil,

  • ½ tsp cinnamon powder,

  • 5 cardamon pods crushed,

  • ½ onion sliced into fine half rings or diced,

  • 3 tbsp dried dill or 5 tbsp chopped fresh dill,

  • 2 ½ cups chicken broth,

  • salt to season.

Preparation

Wash the rice in water until clear. Drain, cover with cold water and soak for 30 minutes. Pour the oil into a pan and set on medium heat. When the oil is hot, put in the cinnamon and cardamon. Stir for 5 seconds, then put the onions and stir-fry until golden-brown. Add the rice and the dill. Reduce the heat to medium-heat and stir until the rice grains look translucent (1-2 minutes). Add the chicken broth and bring to a boil. Cover tightly. Reduce the heat and cook for 25 minutes.
