Lisa’s ginger dal

Serves 4

Ingredients

  • 150 g red lentils,

  • 500 mL water,

  • 1-2 cloves garlic, minced,

  • 1 chili jalapeno pepper,

  • 8-10 cm fresh ginger, minced,

  • 30 g creamed coconut,

  • ½ tsp salt.

Preparation

Combine the red lentils with water and ½ tsp salt. Bring to the boil, then lower the heat and simmer until the lentils have disintegrated and become mushy (about 20 minutes). If needed, add more water.

Meanwhile pound or puree the garlic, chili and ginger together. Add them to the cooked lentils. Scoop the coconut cream into the lentils and stir. Season to taste.
