Orange and poppy seed cake

Serves 8

Ingredients

  • 50 g poppy seeds,

  • 120 g soft butter,

  • 185 mL warm milk,

  • 250 g self-raising flour,

  • 250 g caster sugar,

  • 185 g butter,

  • 3 eggs,

  • 1 packet vanilla sugar,

  • 2 tbsp orange zestingredient{orange}.

Topping:

  • 150 g icing sugar,

  • 2 tbsp orange juice,

  • 1 tsp orange zest.

Preparation

Preheat oven to 180ºC and grease a baking tray. Mix the poppy seeds in a bowl with the warm milk and leave for 15 minutes.

Cream the sugar and butter together, then add the eggs, the flour and orange zest and mix. Incorporate the milk and poppy seeds and whisk well for 3 minutes until the batter thickens. Pour in the cake tray and bake for 50 minutes.

For the icing, melt the butter and mix with the icing sugar and orange zest and juice and 3 tablespoons of boiling water. Coat the cake with the icing while it is still warm.
