Chicken with tarragon cream

Ingredients

  • 4 chicken breasts,

  • 1 bunch tarragon,

  • 250 g butter, softened,

  • 250 mL double cream,

  • 2 lemons,

  • salt & pepper.

Preparation

Pre-heat the oven to 160°C.

Prepare the tarragon butter by chopping the tarragon finely and mixing it with the butter.

Put the chicken breasts in an ovenproof dish and coat with the tarragon butter. Bake in the oven for 20-30 minutes. Then carefully discard the melted butter, keeping the tarragon. Squeeze the lemon juice over the chicken breasts. Pour the double cream and season. Then bake for a further 15 minutes and serve with rice or couscous and a salad.
