Caramelised endives

Serves 5

Ingredients

  • 1 kg endives,

  • 2 tbsp caster sugar,

  • 2 oranges,

  • mixed spices,

  • 100 g butter,

  • salt & pepper.

Preparation

Place the chicory in a pan, add the juice of one orange, the sugar, butter, spices, salt and pepper. Cook gently for 10 minutes, turn the chicory and cook for a further 10-15 minutes, until caramelised. Peel the second orange and chop the segments into little strips. Add to the chicory and cook for 5 minutes until dissolved.
