Spinach SaladΒΆ
Serves 3
Ingredients
Organic spinach,
1 avocado,
2 tomatoes,
1 apple or pear,
some sort of nuts,
optional: cheese,
whatever else looks good that day at Berkeley Bowl or other supermarket.
For the dressing
cup balsamic vinegar,
2 tbsp Dijon mustard,
1 tbsp minced garlic,
1 tsp freshly ground black pepper,
1 tsp salt,
1 cup plus 2 tablespoons olive oil.
Optional: hint of parmesan.
Preparation
Stir everything but the olive oil, then whisk the mixture continuously while slowly pouring in the oil. Serve with the salad.
