Ginger salmon

Serves 6

Ingredients

  • 600 g salmon,

  • ½ tsp salt,

  • 1/4 cup soy sauce,

  • 1/4 cup sake,

  • 1/4 cup mirin,

  • 2 tbsp sugar,

  • 3 tbsp chopped green onions,

  • 3 tbsp grated ginger,

  • 1 lemon,

  • pepper flakes to sprinkle.

Preparation

Season the salmon with salt and allow to marinate for 15-30 minutes.

Combine the soy sauce, sake, mirin, sugar, green onions, red pepper flakes and ginger. Bring to a boil in a small pan. Cool.

Pour cool marinade over fish and marinate for 30-60 minutes. Remove fillets from marinade and reserve the marinade. Grill or broil the fish fillets about 4-5 minutes each side.

Reduce the marinade by simmering it in a pan until the volume has reduced by half. Pour the reduced marinade over the cooked fish and serve.
